4 layer burrito - dats me 🙂 But 4 layers still ain’t enough especially when the chill winds hit. Even Finland wasn’t this chilly 😂 Actually feeling really grateful for @thebonelesskitchen now that I’m back in SG. I felt it was the most authentic and closest to the “Korean taste”. Everywhere on the street only had army stew with meat in Seoul, so thank goodness @thebonelesskitchen has Veganised options 🙌🏼

Getting the veggies in💪🏼 big rice bowl topped with half mixed veggies and steamed cali, and other half is @alexafuelednaturally ‘s Caesar salad topped with sautéed tempeh, I have whipped up a sauce I’ve fell in love with, for those who asked on my previous post here it is-> I sauté the tempeh in a mixture of soy sauce and a touch of maple syrup which helps it to caramelize and is so simple but absolutely bomb!🤯

Chocolate cream tarts with oatmeal crust by @nm_meiyee 🍫 Recipe (makes 2 tarts): 1/2 cup GF rolled oats. 1/4 cup and 2 tbsp whole wheat flour. 3 tbsp coconut oil. 2 tbsp agave nectar. 1 1/2 tbsp cocoa powder. 1/4 tsp salt. Preheat oven to 350˚. Pulse oats, whole wheat flour, coconut oil, agave, cocoa and salt, in a food processor until oats are coarsely ground and mixture looks like wet sand. Firmly press into bottom and up the sides of tart tins. Bake until crust is golden brown and smells toasty, 20–25 minutes. Transfer to a wire rack; let cool. Chocolate cream filling: 30g melted dark chocolate. 1/4 cup cashew nuts (soaked). 2 dates (pitted). 1 tbsp coconut cream. Process cashew nuts and dates. Add chocolate and coconut cream, process until smooth. Pour filling mixture into cooled tart shells and smooth top. Place them in the fridge for 10-15 minutes to set. Melt dark chocolate, once melted, stir in a tsp coconut oil. Pour chocolate on top and top with berries. It's not the holidays without some sugar cookies! Loving this vegan cardamom sugar cookies recipe from @thehungrywarrior! Recipe (for about 30 cookies) 150 spelt flour 150 ground blanched almonds 1 Tsp baking powder 150 gr cold vegan butter 60 gr brown cane sugar 1 heaping tsp cardamom 1|2 Tsp bourbon vanilla powder Pinch of sea salt Zest of 1|2 a small organic orange Mix butter and sugar until creamy. Add the rest of the ingredients and mix until you have a crumbly batter that holds together when pressing down on it with your fingers. Divide the dough into two and roll them into even long rolls, about 3-4 cm diameter. Wrap into plastic wrap and leave in the fridge for at least one hour. Preheat the oven to 175*C, take dough out of the fridge and cut into 2cm pieces. Flatten them into rounds with the palm of your hand, evening out the edges with your fingers. Put the cookies on a lined baking sheet, then run the back of a fork through the top to make those grooves. Bake for 10-12 minutes or until golden brown. Cool the cookies on a rack, then dust them with powdered sugar to get that snow ball look #gloriouslyvegan

Vegan Zucchini "Meatballs" Recipe 👇 INGREDIENTS: 1 (15-ounce) can chickpeas, drained and rinsed 3 garlic cloves 1/2 cup rolled oats* 1 teaspoon dried basil 1 teaspoon dried oregano 1/2 teaspoon salt 2 tablespoons nutritional yeast juice of 1/2 lemon 1 cup shredded zucchini (about 1 large zucchini) 32 ounces marinara 8 ounces whole grain pasta DIRECTIONS: In the bowl of a food processor, combine the drained and rinsed chickpeas, garlic cloves, and rolled oats. Pulse for about 5-10 seconds, until finely chopped. When you press the mixture between your fingers, it should hold together. Transfer to a large bowl along with the dried herbs, salt, nutritional yeast, lemon juice and shredded zucchini. Do not use more than 1 cup of shredded zucchini. Stir together until well-combined. If the mixture is too wet to handle, add a little flour (you can grind extra oats into a flour) or nutritional yeast to help absorb excess moisture. Preheat the oven to 375°F then line a baking sheet with parchment paper. Using your hands, scoop out on heaping tablespoon of the zucchini mixture at a time and roll into 12 separate balls. Arrange on the baking sheet a few inches apart then bake in the oven for 25 minutes. Meanwhile, cook pasta as directed. Once the zucchini balls are light golden brown, remove them from the oven and set aside. Serve warm over cooked pasta with marinara sauce. Garnish with fresh basil and enjoy! yield: 12 BALLS // 4 SERVINGS prep time: 20 cook time: 25 total time: 45

*Eats toast for dinner*😂 I just can't get over my nut free Nutella!! You guys have got to go check it out! I don't actually think it's on the new blog yet, so here is the recipe: Ingredients: * 1 Japanese or normal sweet potato * 3T cacao powder * 1-2T maple syrup * 1T coconut sugar * 1-2T almond milk (for thinning) - Method: 1. To cook the potato, stab it all over with a fork, wrap in in a damp paper towel, and cook it in the microwave on the "potato" setting. When it's done, take it out, remove the skin, and roughly chop it to break it up a little so you can put in in the food processor. 2. Put the cooked/mashed potato in a food processor and pulse until ideally smooth but actually until it's just crumbly because that's usually as smooth as I can get it... 3. This is when it's time to add a splash of almond milk and maple syrup so you can continue to pulse until it's actually smooth. 4. Once that's combined, add in the coconut sugar and cacao powder as well and pulse until combined, scraping down the sides as needed. 5. Once everything is smooth, well combined, and sweet enough to your liking, take it out of the food processor and transfer to a jar. Voila! You can eat it like Nutella on bread or fruit, or frost cakes and cupcakes with it! 6. For best texture and flavor, let it sit in the fridge to chill for 6ish hours or overnight before eating. Store in the fridge. -

Such an advocate for meal prepping. So many people think oh no but it takes so long... but if you add up the amount of time you have to take out of your day to prepare breakfast and snacks for the day and get home and the last thing you want to spend time on is cooking dinner it would probably be longer than that 2 or 3 hours on a Sunday or any day I would spend preparing my food for the week 😋 I also find if I prepare my food ahead I am so much more likely to eat healthy that week because even if I get home after work and don’t really feel like that tofu and veggies I’ve already made I will eat it because I would rather eat something already made than go and cook something that I “feel like” which would probably be something I regret as it wouldn’t be as healthy and makes me feel sluggish. Food regrets ain’t fun 😝

Recipe below! #Repost @letscookvegan ・・・ Sun-dried tomato, mushrooms and Cashew "Ricotta" pasta by @healthyfrenchwife 💚 Recipe⠀ Ingredients:⠀ * 1 can of diced tomatoes⠀ * 2 tbsp of tomato paste⠀ * 1 onion diced⠀ * 2 cloves of garlic minced⠀ * 2 cups of sliced mushrooms⠀ * 1 tbsp dried italian herbs⠀ * 1/2 cup of chopped sundried tomatoes⠀ * 1 tbsp olive oil⠀ * 1 tsp chilli flakes - optional⠀ * a packet of spaghetti or fettucine pasta⠀ * salt and peper to taste⠀ * fresh basil⠀ Cashew Ricotta Cheese:⠀ * 1 cup of soaked raw cashews in water (minimum 2 hours- best overnight)⠀ * 1/2 cup of water⠀ * 2 tbsp of nutritional yeast ⠀ * 1/2 tsp of salt⠀ * 1/2 tsp of garlic flakes⠀ Instructions:⠀ 1. Boil some water and cook your pasta following the packet instructions.⠀ 2. Cook the onion and garlic in a pan with olive oil.⠀ 3. Add in the mushrooms.⠀ 4. Add the chilli flakes, dried herbs and cook until mushrooms and capsicum are cooked.⠀ 5. Add in the sundries tomatoes and the can of diced tomatoes and simmer on low heat.⠀ 6. Once the pasta is cooked, drained and mix with the sauce. ⠀ For the cashew ricotta:⠀ 1. Rinse and drain the cashews. ⠀ 2. Mix the cashews in a blender with the water, salt and nutritional yeast until creamy.⠀ 3. Serve a large dollop on each pasta bowl to add a cheesy creamy factor! #letscookvegan

Russian style Crepes (Blini) (vegan) 2 flax eggs 3 cup of rice milk 1 tsp White vinegar and 1 tsp baking powder mix together and added to the rice milk to create a buttermilk effect. 4 tbs of melted coconut oil 1 fresh vanilla pod scrapped and added to the mix or 1 tsp pure vanilla extract 2 1/2 cup of all purpose flour mix. 2 tbsp of maple syrup. Combine everything and make batter. It has to be thinner batter than a normal pancake batter. Add more rice milk if you need to thin it out. Cook in a flat pan for 2 min on each side. Voila! Mushroom Buddha Bowl 🍄😍 Made with roasted portobello mushrooms, cumin roasted cauliflower, black rice, steamed edemame and sauteed kale/red bell peppers. . I even made a dressing for the top that was way better than I expected - mixed vegan mayo, lemon juice and EVOO.

I feel like that bright happy lemon, enjoying her almond butter pumpkinseed bread right now because I’ve just finished my last exam of the semester an hour ago 👏👏👏 honestly I’ve never worked so hard to still get a bad grade • in high school I would always manage to do really well by just last minute studying and but now i would study for a week and still get trashy results 🤷🏻‍♀️ I’m trying not to be too harsh on myself or blame anything, because it’s a new learning environment and particularly for me, it will take a while to get use to new studying habits that I need to adapt to! (On another note, some random trainer decided to advice me on my squat form yesterday which is really nice and super super important, I just find it so funny that I’m getting these advice all at once when I’ve been gyming for a while now!!)

On my way back from the Indian supermarket @patelbrothers a man on the subway asked me if the @lifewithoutplastic book I was reading was good, as he and his wife were also trying to reduce plastic too. I can't put down the book down! There's so much information in here, and I realize more than ever that being #plasticfree is certainly not just a 'lifestyle' choice. The health implications of plastic, especially in food packaging is beyond disturbing. I know that health-wise I really feel better without foods packaged in plastic. Anyhow, I was chatting with the man about how "A Plastic Ocean" changed my life, and he said after the first 15 minutes of the documentary, his wife was convinced. Poppyseed nicecream with warm raspberry and currant cinnamon compote and some crunchy caramel biscuit creme caramel cookie crumbles by @frei_style 💕 For the nicecream: 20 gr grounded poppyseeds. 2-3 frozen bananas. Some date syrup. 2 tbsp almond milk. Add all ingredients to a high speed blender and mix until nice and creamy, add more milk if needed. Ok. So who likes pancakes? So many of you virtually raised your hands but I’m not a fan. I’ve said it before and I’ll say it again… I’m more of a savoury person (even though I still eat sweets) so when a packet of @orgran_healthandnutrition buckwheat pancake mix came my way, I was super excited to turn it into a savoury-type dish. This Buckwheat Pancake mix needs sugar to sweeten it but I love because it is up to ME to control how sweet I make it and guess what? I added no sugar. Instead I added fresh beetroot that I boiled and pureed which gave it a smooth texture and natural sweetness. Of course adding honey or maple syrup is a given but again, I was able to drizzle the amount I wanted. I say this because so many pre-mixed pancake flours have a huge amount of sugar in them already. Now there are so many different way to make a pancake and that mostly depends on the country you come from but to my family, they need to be thick and fluffy which is exactly how they turned out (thank goodness! LOL) I didn’t know if the added beetroot would turn out but it was perfect. I have added a quick ‘highlight’ of me making these RED VELVET BEETROOT PANCAKES on my instagram page. Check it out.
